Look at these cute animal-shaped pasta. |
Ingredients:
(Yields 2 servings)
A handful of pasta
A handful of English spinach, coarsely chopped
A small chunk of chicken breast
2 small cauliflower florets, coarsely chopped
1 tablespoon ground rolled oats
1/2 cup fresh milk
How to:
1. Boil pasta in water with a few drops of rice bran oil for 15 minutes. Drain and drizzle with some virgin coconut oil. Toss and set aside.
2. Cook spinach, cauliflower, chicken, and oats in milk. Add some water if the mixture becomes too sticky. I use my SEED lunch box and steam-cook for 30 minutes.
3. Let cool for 10 minutes before transferring to a blender. Give the mixture a few pulses until you get the consistency that your baby/toddler likes.
4. Pour the sauce over pasta. Serve warm according to your child's preference.
