Pumpkin ABC Soup with Black Chicken & Macaroni
I usually cook the classic ABC soup with chicken, potato, carrot, and onions. Sometimes, I add celery and sweet corn. This time round, I add pumpkin! And I use black chicken. The soup is so sweet and I don't even have to add salt. So, my 13-month-3-week-old toddler can have a bowl too. :)
Ingredients:
(Serves 2 adults and 1 toddler for 1 meal)
1 black chicken, cleaned and chopped into 4 chunks, with skin, no innards
1/2 small pumpkin, chopped into large chunks
1 medium carrot, chopped into large chunks
1 large potato, chopped into large chunks
1 large yellow onion, cut into 8 wedges
A handful of goji berries (optional)
Macaroni, cooked in boiling water and drained

Alphabet pasta (for kids), cooked in boiling water and drained
How to:
I clean all ingredients and put into a slow cooker. Switch on "High" mode and cook for 4 hours. Then switch to "Low" and cook for an additional 2 hours.
Serve hot with rice, noodles or pasta. I toss in cooked macaroni a few minutes before serving.
For my toddler, I blend the soup into a smooth, creamy soup and toss in cooked alphabet pasta for him. Serve warm.
