Greek Yogurt Honey Muffins
I have always wanted to bake muffins with Greek yogurt. Greek yogurt is so creamy and delicious! My kitchen is filled with the aroma of yogurt and honey when I'm baking these lovely mini muffins. Great snack for our long road trip today. :)

Ingredients:
(Makes 15 mini muffins)
1 cup Greek yogurt
1 large egg
1 tablespoon grapeseed oil
1/4 cup honey
1/2 teaspoon vanilla extract
1 cup unbleached all-purpose flour
1/2 tablespoon baking powder
Dried cranberries
How to:
1. Preheat oven to 175°C. Line a 12-cup mini muffin tray with liners.
2. In a bowl, mix yogurt, egg, oil, honey, and vanilla extract with a spatula until combined.
3. Add flour and baking powder into the yogurt mixture. Mix until just combined. Don’t over mix the batter. Sprinkle dried cranberries onto each muffin.
4. Transfer batter to prepared muffin pan. Bake for about 20 minutes, until a toothpick comes out clean. Cool 5 minutes in pan on a wire rack, then remove from pan and cool to room temperature. Keep in airtight containers.
