Immune-boosting soup with millet & vegetables medley
My 17mo toddler is recovering from his first bout of stomach flu. I've eliminated dairy products, especially fresh cow's milk from his diet because they seem to give him loose stools. At the same time, I cook this immune-boosting soup with millet and vegetables medley for him.
Ingredients:
(Serves 2 meals)
4 tablespoons of millet grains, soaked overnight, rinsed and drained
2 tablespoons of minced lean pork
1/2 cup zucchini, cut into small cubes
1/2 cup celery, coarsely chopped
1/2 cup carrot, cut into small cubes
1/4 cup pumpkin, cut into small cubes
1/4 cup potato, cut into small cubes
1/4 cup yellow onion, chopped
Water, enough to cover all ingredients
How to:
I use the steam-cook method. So I put all ingredients into my electric lunch box and steam-cook for 1.5 hours. Then, I blend it before serving.
Notes:
This is a versatile dish. Pork can be substituted with chicken. Water can be substituted with homemade broth. Other ingredients to consider can be sweetcorn, mushrooms, peas, broccoli, apples, pears.
This would make a good pasta base too. I can add in some mushrooms, milk/cream, cheese, and oats to thicken the gravy. Serve with cooked pasta and voila!
To be more palatable for adults, add some salt before serving. To be more presentable for adults, sprinkle some toasted chopped nuts and coriander leaves. Awesome!
